Celery is not such a frequent guest on our table, but in vain!

This product can become a road to good health and a beautiful figure.

If the taste of a fresh vegetable is not everyone likes, then few will refuse the most tender puree or cream soup.

And hardly anyone will be able to guess that the dish is made from celery.

Celery puree - general principles of preparation

For cream soups and vegetable puree, you can use stalks or rhizome of celery. The taste of the tops and roots is slightly different. Someone likes stalks more, and someone recognizes root vegetables.

Celery stalks do not require cleaning, they just need to be washed. Cut them into transverse rings. Rhizomes are peeled before use, like potatoes, and then chopped. Shape and size can be any.

Boil the vegetable in water, broth or milk. Standard spices are added: pepper, salt, paprika, aromatic spices. But dishes from one ingredient are rarely prepared.

What else is added in mashed potatoes:

• vegetables, including melons;

• mushrooms;

• meat;

• fish and seafood;

• bird;

• cheeses, dairy products.

Garnish mashed potatoes with herbs. For taste, oil is added to it, most often cream. Cream soups served with cream, crackers. Sometimes supplemented with pieces of meat, chicken, fried mushrooms.

Recipe 1: Celery Puree with Potato and Milk

For such a celery puree you will need a root. The dish can be used as a side dish for poultry, fish, meat or on its own.

Ingredients

• 600 ml of milk;

• 2 large celery roots;

• 1 potato;

• 1 small onion head;

• 40 grams of oil;

• 400 ml of water;

• spices, herbs.

Cooking

1. Rinse root vegetables and peel them. Cut celery and potato into slices.

2. Combine milk with water, send to the stove and bring to a boil.

3. Add cooked root vegetables and cook for 10 minutes.

4. Now salt, cook for about 15 minutes until the vegetables are completely soft.

5. While you can cook onions. To do this, clean the head and fry until golden with butter.

6. Drain the broth from cooked vegetables with a colander. But pouring it is not necessary, we will bring the mashed potatoes to the desired consistency.

7. Puree vegetables. Then add the fried onions. If you don’t like the slices, then it can also be mashed with a blender.

8. We evaluate the consistency and, if necessary, add milk broth. It must be borne in mind that the mass will become thicker. We taste and season with spices.

Recipe 2: Chicken Celery Puree Soup

For healthy celery puree soup, we will use stems. The recipe is for chicken breast, but you can also take trimmings from the thigh, it will be even more tender.

Ingredients

• 0.5 chicken breast;

• 4 stalks of celery;

• 2 potatoes;

• 1 onion;

• 200 ml cream;

• 40 grams of oil;

• salt pepper;

• 1 carrot.

Cooking

1. Wash the breast and cut into small pieces. The form does not matter. Boil for ten minutes, it is more. We pour water a little more than a liter.

2. Cut the peeled potatoes into small slices, send to the chicken and cook for about ten minutes.

3. Add washed and chopped celery stalks.

4. Strain chopped onions and grated carrots in butter. Fry vegetables until rosy.

5. As soon as the potatoes with celery are cooked, we drain part of the liquid from them, but not all. Add the fried vegetables and mashed together.

6. Gradually introduce the cream. We evaluate the density of the soup and dilute the previously drained broth.

7. Salt and send again to the stove. We warm almost to a boil and immediately turn off the fire.

8. Pepper, decorate with herbs and aromatic soup is ready.

Recipe 3: Dessert Mashed Celery with Apple

A variant of an unusual dessert in the form of mashed celery. It can be served in a bowl and eat with a spoon. Or make a little thinner in consistency and serve as a cocktail. Celery is used by stem.

Ingredients

• 4 stalks of celery;

• 0.5 lemon;

• 2 apples;

• 150 ml of water;

• sugar;

• ice cubes.

Cooking

1. We wash the celery stalks. If they are damaged, then immediately remove. Cut into pieces and lay in the blender's container.

2. We wash the apples, remove the peel from the fruit and also cut into pieces, bypassing the stub with seeds. We send to the container to the celery.

3. Squeeze the juice to them from half a lemon, whisk until mashed.

4. Enter the water, but not all. About 2/3 and add sugar to taste. Whisk. Instead of sugar, mashed potatoes can be seasoned with honey or a substitute.

5. Evaluate the consistency. If preparing a drink, then you can add more water.

6. Lay out in portions, decorate with a slice of lemon.

Recipe 4: Celery Puree Soup with Golden Pumpkin

The recipe for a bright and cheerful mashed potato soup with celery, which has a delicate texture and a very pleasant taste. From these products you get two large servings. Celery is used by stem.

Ingredients

• 100 grams of celery stalks;

• 200 grams of pumpkin;

• 150 grams of potatoes;

• 1 carrot;

• 1 small onion head;

• 1 liter of water;

• seasonings, a little butter.

Cooking

1. We cut cubes of potatoes and set to cook in a prescription liquid. Instead of water, you can use any broth.

2. Cut or rub the peeled carrots, chop the onion finely, shift to the potatoes and also cook.

3. Cut the pumpkin into cubes and lightly fry in butter, send everything to the pan.

4. We chop the celery stalks with ringlets and transfer to soup. Cover with a lid and cook all the vegetables until completely soft. If something is brewed a little earlier - that's okay. At the end of the dish you need to salt.

5. Remove the pan from the heat, remove the lid, and cool the soup a little.

6. Puree with a blender, add spices if necessary. Pour into plates. Serving golden soup is recommended with sour cream.

Recipe 5: Celery Puree with Zucchini

To make this diet puree with celery, you need a root vegetable. We use young zucchini, you can replace squash.

Ingredients

• 0.4 kg of squash;

• 0.4 kg of celery roots;

• 30 ml rust. oils;

• salt;

• greenery;

• 1 tsp Paprika

• 1 carrot.

Cooking

• Peel the carrots, cut into circles and pour into the pan.

• Add the peeled and also chopped celery, set to cook until half ready.

• While we are engaged in zucchini. They need to be washed, remove the tips on both sides and cut into cubes. If the skin is thick, it is best to remove it. The same goes for seeds.

• Add zucchini to other vegetables and cook until the end. It usually takes no more than 15 minutes, do not forget to salt the dish.

• Drain excess water, add vegetable oil, paprika and stir. When serving, sprinkle with chopped herbs.

Recipe 6: Celery Soup with Mushrooms

Fresh champignons will be used for this celery puree soup. Boil mushrooms beforehand is not necessary.

Ingredients

• 5 petioles of celery;

• 2 potatoes;

• 0.2 kg of champignons;

• 30 grams of butter;

• 1 onion;

• 100 ml cream;

• spices, several sprigs of parsley.

Cooking

1. Cut the mushrooms into thin slices, and dice the onion.

2. Put the butter in a frying pan, add the onion and fry until transparent.

3. Put mushrooms to it, cover and simmer for about ten minutes, then fry everything together until they are beautiful and rosy in color.

4. Finely chop the potatoes and cook for five minutes in a liter of water.

5. Add the celery, cut into circles.

6. Boil the soup for about five minutes, and put the fried mushrooms in it, but not all. Leave the spoon for decoration.

7. Cook the soup until the vegetables are soft, salt for a few minutes before being cooked.

8. Puree with a submersible blender, dilute with cream and warm again.

9. Pour into plates, decorate with laid mushrooms and parsley leaves.

Recipe 7: Celery Puree with Cauliflower

A variant of a very magnificent and delicious mashed potatoes with celery, for which you need cauliflower. Celery is used root.

Ingredients

• 200 grams of celery;

• 400 grams of cauliflower;

• 100 grams of carrots;

• salt;

• 200 ml of milk;

• 70 grams of oil.

Cooking

1. We clean the celery roots, cut into slices and transfer to a pan.

2. We sort the cauliflower into inflorescences, add to the celery.

3. Cut the carrots arbitrarily and also toss to the vegetables.

4. Pour vegetables with water. You can immediately use boiling water to reduce the time.

5. Cook until completely soft. Toward the end of cooking you need to salt.

6. In a saucepan, boil milk with butter, turn off.

7. Drain the broth from vegetables, puree and gradually introduce hot milk. We adjust the density of the dish, taste it.

8. Season with pepper and the side dish is ready!

Recipe 8: Celery Puree Soup with Cheese and Crackers

To prepare this wonderful soup, root celery is used. Ginger is also added. It makes the dish unusual and very fragrant. To serve such a soup you will need crackers, preferably home-made.

Ingredients

• 1 celery root;

• 600 ml of meat broth;

• 1 spoon of ginger root;

• 1 spoon of ghee;

• 1 melted cheese;

• 1 onion head;

• 1 carrot;

• salt;

• branches of dill;

• bread for crackers.

Cooking

1. Finely chop the onion head and fry until rosy, transfer to a saucepan.

2. Add the chopped carrot there.

3. Peel the celery root and cut into small cubes. Throw in soup.

4. Put chopped ginger. You can take a little less than indicated in the recipe.

5. Fill everything with broth and put on the stove to cook. Cook at a slow boil.

6. Once the vegetables are soft, add the crushed processed cheese and salt to them. Hold on the stove for a minute, remove.

7. Let the soup cool slightly and mashed. Done!

8. For crackers, cut white bread into cubes, fry in a pan. You can cook without oil and with its addition.

9. Pour the soup, sprinkle with crackers, decorate with dill.

Celery Puree - Tips & Tricks

• Celery puree will be bright and beautiful if you add paprika, turmeric, curry to it. For a children's table, you can make an unusual pink puree by adding a piece of beet or a little juice to the pan when cooking.

• It is not always possible to cook puree with a suitable consistency. But you need to remember that if it contains a lot of butter or contains potatoes, then the dish will become thicker as it cools.

• Celery root changes color in the air and may darken. To avoid this, do not pre-clean the product from the skin. And if this has already been done, then you can just pour the pulp with lemon juice or apple cider vinegar.

• Despite its many beneficial properties, not everyone can eat celery. With caution, it can be eaten by women during pregnancy and during breastfeeding. Also, the use of this product is not recommended for people who suffer from epilepsy.
